A Favorite Meal

Wednesday night I made one of my favorite meals: Jamie Oliver's Chicken in Milk, mashed potatoes, sauteed green beans, and sauteed mushrooms.

Once when I prepared this recipe I accidentally made the horrible mistake of discarding the sauce, but now I pour it over everything!

Raspberry Cake

I have been on a blogging hiatus, but all the fresh fruits and vegetables of the summer have me excited.

We have been picking blackberries in the back yard and this Raspberry Cake from Better Homes and Gardens is one of our favorite ways to eat them!

Pork Chops

Pork chops can be bland and tough if not prepared correctly...  or they can be fabulous and flavorful

For Dan's birthday a few years ago, I made some a-mazing stuffed pork chops.  The downside (or the upside if you like cooking as much as I do), I was in the kitchen preparing them for at least two hours!  So instead of that today I give you two very simple, favorite pork chop recipes.

Herb-Crusted Pork Chops - I skip making my own breadcrumbs and use panko breadcrumbs instead.

Coconut Curry Noodles

I have slowly been discovering the food blog "Mel's Kitchen Cafe."  I always seem to be surprised and delighted by what a find there!  (I can't wait to try out theses Brookies.... an amazing idea!)

In December, two other friends and I got together to make soup.  We each made three family sized servings of different soups.  The soups were great, but what I enjoyed the most was the leftovers we had for lunch!  I needed to know how to make Red Coconut Curry Noodles!

I made the recipe with regular linguini instead of rice noodles (because I'm cheap like that) and without the broccoli coleslaw (because Dan believes that broccoli coleslaw is a four letter word).   Since I used regular noodles I added an extra half a cup of chicken broth.

Vegetable Tian

The past few months have been a blur!  Thanksgiving, Christmas, my girl's first birthday! I haven't posted lately, but I have been cooking!  A lot!  So hopefully I will be posting more frequently in the coming weeks.

This time of year I find myself eating cupcake after cupcake, but craving fresh fruits and vegetables!  This week I made Ina Garten's recipe for Vegetable Tian and it did not disappoint!  Though I didn't have fresh thyme, I used some that I had dried from our garden and the dish still tasted fresh and delicious.
